Ingredients

1 stick butter
or margarine
1 small bunch scallions, spring or green onions
chopped
½ cup parsley leaves
finely chopped
½ cup celery
finely chopped
1 can mushrooms
(small), drained

3 tablespoons all-purpose flour
2 cups light cream (half&half)
2 cups swiss cheese
grated
½ cup vermouth
or sherry, dry
*
1 x cayenne pepper
to taste
*
1 x salt
to taste
*
1 pound crab meat
white (or shrimp)

Directions

Melt butter in heavy saucepot. Sauté vegetables until soft.

Blend in flour and add cream.

Heat until thickened. Add cheese and heat until it has melted.

Add wine, cayenne pepper, and salt. Fold in crab meat or shrimp.

Heat gently for 8 to 10 minutes Serve with french bread or in patty shells.
