An excellent rendition of Coq au Vin - chicken cooked in red wine for the crockpot. The sauce is packed with layers of flavor, perfectly balanced and the chicken was fall apart tender.

Ingredients

6 scallions, spring or green onions
3 slices bacon
4 pounds whole chicken
cut up
1 teaspoon salt
½ teaspoon thyme

8 white onion
baby or mini sized
2 cups red wine
dry

2 teaspoons chicken broth
1 garlic cloves
minced
½ pound mushrooms
2 tablespoons butter
1 ½ tablespoon cornstarch
2 tablespoons water
cold

Directions

Chop white part of green onion only.

Sauté bacon and chopped onion in large fry pan until bacon is crisp.

Saute bacon and chopped onion in large fry pan until bacon is crisp.
Transfer to crock pot.

Transfer to crock pot. Wash chicken. Pat dry. Add to pan.

Season with salt and thyme.

Brown on all sides.

Wash chicken. Pat dry. Add to pan.
Transfer to crockpot.

Transfer to crockpot. Peel whole onions. Cut a small cross in root end of each.

Brown in remaining drippings. Add to crockpot.

The pot should be very brown at the bottom.
Pour wine into frypan, stir to loosen brown bits.

Add chicken stock. Stir until dissolved. Pour over chicken. Add garlic. Cover.

Meanwhile, melt butter in pan.

Cook on low 6 to 8 hours. Slice mushrooms. Sauté in butter.

Slice mushrooms. Saute in butter.
Add to chicken.

Add to chicken. Turn heat on HIGH, when juices bubble, stir in cornstarch and water which have been blended together.

Cook until thickened. Sprinkle with parsley.

Chicken is succulent and falling-apart.
