Cabbage Cucumber Salad with Tamarind Dressing
A quick, easy and delicious salad. Cucumber, mang bean sprouts and cabbage were crunchy and juicy. lemon, yogurt and tamarind dressing was creamy and refreshing. A delicious dish.

cabbage
shredded |

cucumbers
cut into matchstick-size |

mung bean sprouts

scallions, spring or green onions
thinly sliced |

cilantro
freshly coarsely chopped, or to taste |
Directions
Mix the dressing ingredients in a medium bowl, stir well.
Season dressing to taste with salt and pepper.
Place cabbage, cucumbers, mung bean sprouts, green onions and cilantro in a large bowl.
Add dressing, toss to coat.
Season with salt and pepper.
Serve.
Dressing can be made in advance, keep it refrigerate.
Salad can be prepared in advance, separate ingredients.
Before serving, toss salad with dressing together.
