BLT Pasta Salad

BLT Pasta Salad

Always a hit and it's quick and easy to make. Tastes just like a BLT sandwich in the form of a pasta salad.













Low Cholesterol, Trans-fat Free


7 ounces pasta, elbow macaroni
cooked and drained
8 slices bacon
cooked and crumbled
1 cup mayonnaise
or salad dressing
cup chili sauce
¼ cup lemon juice
from concentrate
2 teaspoons chicken broth
2 teaspoons sugar
1 large tomatoes
seeded and chopped
¼ cup scallions, spring or green onions
4 cups lettuce
thinly sliced


Assemble the ingredients for the salad
Roughly shred the lettuce
...and dice the tomatoes
Mise en place (prep) done, ready to assemble the salad

In large bowl, combine mayonnaise, chili sauce, lemon juice, bouillon and sugar; stir in macaroni, tomato and onions.

Mix the dressing for the salad
Add the tomatoes and cooked pasta

Cover; chill.

Just before serving, stir in lettuce and bacon.

BLT Pasta Salad - ready to eat

Refrigerate leftovers.

Quite good, indeed it does taste like a BLT sandwich in a pasta salad. Next time I will leave out the sweet chili sauce and perhaps even the lemon juice. I felt they were unnecessary and the flavor would be a bit cleaner without them.

This looks SO good. I think I will make it today. I am not sure I will do so much lemon juice, seems like a lot to me?? I do not have chili sauce so I will take your recommdation and leave it out.

Add 1 tsp Dijon mustard to the mayo and cheddar Cheese Cubes at the end for an even better BLT salad!
