Give a warm welcome to this cool smoothie. Mint has traditionally had a role in welcoming guests throughout history, and by many different cultures. The ancient Greeks rubbed mint leaves on the dining tables to greet guests, mint tea is offered to guests in the Middle East and many cultures boil the leaves to freshen the air. This is also the recipe to say goodbye – to stomach problems – mint has a soothing effect on the digestive tract, relieving symptoms of indigestion, cucumber too is high in fibre, also good for digestive health and pineapple contains a digesting enzyme that is unique to pineapples, Bromelain. Bromelain is know to be good for brain health, also, when you are cooking one of our delicious meat recipes, the meat can be tenderized with pineapple because the Bromelain breaks down the meat proteins. Cucumbers are cool too, they are mainly water, 95% in fact, making them ideal for hydration. Cucumbers contain polyphenols called lignans which are considered helpful in lowering the risk of breast, ovarian and prostate cancers. Be prepared to be bowled over by this smoothie!

This Pasta Salad with Cucumber, Tomato, and Feta was not something I had planned on blogging about. It merely came about because I had nothing to cook for dinner, save a package of gluten-free pasta I had picked up for emergencies and a variety of veggies from my CSA. Then my husband loved it so much that he had two helpings, and he insisted that I write about it. I’m trying to move my family towards a more grain-free existence, but sometimes I just don’t have it in me to think gourmet. Sometimes, we do the best that we can. All this is my way of saying that the amounts of ingredients here are really just approximations. I have no idea what exactly I put in here to make it taste so yummy. You’ll have to channel your inner Italian grandma, and just mix in ingredients until the food tastes good.

Tomato Cucumber Sandwich has always been a favorite of mine. I remember I used to ask my mom to make them, when we used to go for picnics. She would lovingly make them and nicely wrap them in aluminim foil. They would not get mushy or moist, even after 3-4 hours. These sandwiches can also be made for children’s school tiffin as well as wrapped and taken while travelling. However, its better to consume them within 4-5 hours.
