Marinated artichoke hearts, warm pasts, crunchy cucumber, and juicy tomatoes are tossed together with the marinade juice from artichoke hearts, some red pepper sauce, and fresh cilantro. Quick, easy, and refreshing.

whole wheat, or any pasta

CUP ML ARTICHOKE HEARTS
marinated, drained, plus 3 tablespoons of marinade from the jar *

EACH EACH CUCUMBERS
peeled if desired and sliced into half moon

EACH EACH ITALIAN PLUM (ROMA) TOMATOES
chopped

CUP ML BLACK OLIVES
pitted and sliced *

freshly chopped, including the thin stems

Directions

Boil the pasta in a pot of boiling and salted water for about 11 minutes or until it reaches desired consistency. Drain and set aside.

In a large bowl, mix together artichoke hearts, marinade, cucumber, tomatoes, and olives.

Add the pasta, cilantro, and red hot pepper sauce into the bowl, and stir with a wooden until well combined.

Season with salt, pepper and more red hot sauce to taste.
