Tomato Cucumber Sandwich has always been a favorite of mine. I remember I used to ask my mom to make them, when we used to go for picnics. She would lovingly make them and nicely wrap them in aluminim foil. They would not get mushy or moist, even after 3-4 hours. These sandwiches can also be made for children’s school tiffin as well as wrapped and taken while travelling. However, its better to consume them within 4-5 hours.

Ingredients

SLICES SLICES BREAD
white or whole wheat, or 1 sandwich loaf cut into slices

EACH EACH TOMATOES
1 1
EACH EACH CUCUMBERS
medium size

TABLESPOON ML BLACK PEPPER
freshly crushed or pepper powder

salted, optional *

to taste *

Directions

Finely slice the cucumber and tomatoes

Trim the edges of the bread. (optional)

Apply butter evenly on the breads and keep aside. Apply a slightly thick layer of butter on the bread, if you are making the sandwiches for picnics, tiffin or travel.

Arrange firstly 4 slices of tomato on the buttered bread. Then arrange another layer of 4 cucumber slices.

Sprinkle ¼ teaspoon of pepper powder or freshly ground pepper on the sandwich.

Season with salt. This is optional as we are using salted butter. However, if you are making this sandwiches to take during travel, picnic or for your child’s tiffin box, then avoid salt. As the tomatoes and cucumber will release water due to the presence of salt and thus the sandwiches will become soggy and moist.

Cover with another slice of buttered bread.

Cut the tomato cucumber sandwich diagonally into 2 or 4 parts.

Serve with potato wafers and tomato sauce.

If making for tiffin box, then wrap the sandwiches in a cling film or aluminium foil and place keep it in the tiffin box.

Note:-

  1. If you are health conscious you can avoid butter. Directly you can put cucumber and tomatoes on bread.

  2. If you want you can make 1 layer of bread instead of 2 layers. you can use cucumber and tomatoes on same layer.

  3. If you want you can use any kind of mayonnaise also as per your taste.
