Deliciously moist zucchini bread. Great for breakfast or snack with tea or coffee. You can use half whole wheat flour and half all-purpose flour to make this yummy bread even healthier.

Ingredients

4 large eggs
¾ cup vegetable oil
1 teaspoon salt
1 teaspoon baking powder
1 ½ teaspoons vanilla extract
1 ½ cups sugar
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups zucchini
grated
1 cup walnuts
or pecans
1 cup chocolate chips (semi-sweet)
optional, if using reduce sugar to 1 cup

Directions

Preheat oven to 350℉ (180℃).

Generously grease and flour 9x5 inch loaf pan, or spray with nonstick cooking spray.

Stir together eggs, oil, salt, baking powder, vanilla, sugar, flour, baking soda and cinnamon.

Add zucchini. Fold in walnuts.

Spoon into prepared pan. Bake for 1¼ hours or until done.
