This iconic South African casserole layers warmly spiced ground beef with curry, turmeric, ginger, and a touch of cayenne, then sweetens things up with raisins, apricot preserves, and a spoonful of chutney.
Dampened bread gets mixed right into the meat to keep everything moist and give the filling a soft, almost mousse-like texture.
The whole thing gets crowned with a simple egg-and-milk custard that bakes up golden and set, sealing in all those fragrant spices underneath.
Serve it over yellow rice with a fresh salad on the side, the way it’s done in Cape Town.

- Warm the spices in the pot first before adding other ingredients. Blooming the curry powder, turmeric, and ginger in dry heat unlocks deeper, more complex flavor.

Directions
Warm a heavy pot. Put in first 8 ingredients, warm thoroughly.
Remove from heat and add next 6 ingredients. Return to low heat and mix until bubbly.
Dampen and dice bread. Add to mixture and stir well.
Add ground beef and cook for 15 minutes.
Fill a shallow greased casserole dish with Baboti mixture.
Beat egg with milk. Add salt and pepper to taste. Pour over Baboti mixture.
Bake at 350℉ (180℃) for 45 minutes (until custard is golden).
Serve with yellow rice and salad.
