This is the kind of weeknight casserole that feels like a warm hug on the plate.

Sliced potatoes go down first, then a layer of sweet Vidalia onions, followed by a blanket of cream of mushroom soup.

Browned chicken breasts get placed right on top with a sprinkle of paprika, the lid goes on, and the oven does the rest.

After an hour of covered baking, the potatoes are tender, the onions have melted into the creamy soup, and the chicken is juicy all the way through.

Directions

Brown breast in oil and drain on paper towel.

Oil a 1½-quart casserole.

Layer potatoes on bottom; follow with a layer of onions and top with a layer of mushroom soup.

Gently, place chicken breast over soup and sprinkle with paprika.

Cover tightly and bake at 350℉ (180℃) for 1 hour.
