This recipe was given to me by a former co-worker. It is much lighter and healthier than regular lasagna.

With a fresh berry filling accented with a hint of lemon, this crunchy-topped pie satifies lovers of both pies and fruit crisps.

Even the sweet potato/yam "dis-liker" (me) liked the flavor of these. Nice little bite from the cayenne. And the amount of sugar was just right. I don't care for really "sweet" yam dishes at all! Thanks for this addition to our holiday dinner. (Part of my "Thanksgiving 2010" Menu)

No special occasion needed for this decadent dessert...it's so easy.

Use zucchini slices to replace lasagna noodles, which reduces lots of calories and carbohydrate, but it still tastes cheesy and flavorful. A great recipe to cook some seasonal zucchinis into a light yet delicious meal.

A baked potato with a twist. The potato is sliced about 90% and fanned out slight letting seasonings become baked inside the potato. Topped with gooey cheese this create a new favorite baked potato loaded with pizzaz.

A long slow simmer makes this cheesy rich crowd pleaser a certain hit when company is coming.

How about having some baked "rats" made of ground beef at Halloween dinner, this will impress everybody!
