With a fresh berry filling accented with a hint of lemon, this crunchy-topped pie satifies lovers of both pies and fruit crisps.

Ingredients

1 each pie shell (9 inch)
unbaked
¾ cup sugar
granulated white
3 tablespoons cornstarch
2 teaspoons lemon zest
grated
4 cups blueberries
fresh
Crumb topping
cup brown sugar, light
packed

¾ cup rolled oats
½ cup unbleached all-purpose flour
½ teaspoon cinnamon
6 tablespoons butter
cut into cubes, cold

Directions

Preheat oven to 375℉ (190℃).

In a large bowl, combine the white sugar, cornstarch and lemon zest. Gently mix in the blueberries. Pour into prepared pie shell.

In a medium bowl, combine the brown sugar, oats, flour and cinnamon. Cut in the butter cubes until it resembles coarse crumbs. Spread evenly over blueberry filling.

Bake in preheated oven in the lower third of oven for 20 minutes; raise to middle rack of oven and continue baking for another 20 to 30 minutes, covering edges of crust, if necessary, to prevent burning, until browned on top. Cool on rack.

This is the kind of dessert that I can eat all day long from breakfast, lunch, snack to dinner :-) It's packed with juicy blueberries. Buttery-flakey pie crust and extra yummy crumb just bring the pie to a even more delicious level. And a scoop of vanilla ice cream is a must, what a perfect combination!

This fresh blueberry crumb pie looks so juicy and yummy! It's loaded with delicious blueberries, and love the crumb topping that adds extra deliciousness. A perfect summer dessert, and yes, need at least a or two scoops of good vanilla ice cream, hmmm...
