Ingredients

1 ½ cups whole-wheat flour
or whole wheat pasty, or white whole wheat flour
1 ½ tablespoons sugar
1 tablespoon baking powder
1 teaspoon garlic
freshly minced, or garlic powder
½ teaspoon salt
3 cups cheese
choose your favorite such as mozzarella, cheddar, or jack, shredded
1 each roasted red bell peppers
drained, pat dry, and chopped
1 each scallions, spring or green onions
ends removed and sliced
1 large eggs
½ cup milk, low-fat
½ cup yogurt, low-fat
plain
¼ cup olive oil
or canola oil, or grape seeds oil

Directions

Preheat oven to 375℉ (190℃).

Grease and flour 12 cup muffin tin or mini muffin tins.

Whisk together dry ingredients, then stir in cheese, roasted bell peppers, and scallions.

In a separate bowl, whisk egg, milk, yogurt, and oil until well combined.

Pour into dry ingredients and stir with a spoon just until moistened.

Spoon batter into tins and bake 20 to 25 minutes or until toothpick inserted comes out clean.

how is it possible that this "healthier" version is about 400 calories more than the other version?is this accurate?rzb

Just realized that I forgot to change the serving size. I just changed the serving size to 12, which means each muffin has 230 calories. This sounds much lower calories than 400. Thanks for the comment, and happy cooking :)
