Yummy Cheese Muffins (Healthier Version)
100% whole wheat flour, roasted bell pepper, scallions, and olive oil together make these muffins a much healthier snack, and still taste cheesy and delicious.
or whole wheat pasty, or white whole wheat flour
freshly minced, or garlic powder
choose your favorite such as mozzarella, cheddar, or jack, shredded
roasted red bell peppers
drained, pat dry, and chopped
scallions, spring or green onions
ends removed and sliced
or canola oil, or grape seeds oil
Preheat oven to 375℉ (190℃).
Grease and flour 12 cup muffin tin or mini muffin tins.
Whisk together dry ingredients, then stir in cheese, roasted bell peppers, and scallions.
In a separate bowl, whisk egg, milk, yogurt, and oil until well combined.
Pour into dry ingredients and stir with a spoon just until moistened.
Spoon batter into tins and bake 20 to 25 minutes or until toothpick inserted comes out clean.
