These cheesy muffins are perfect with a warm bowl of soup. They can be made as normal size muffins or as mini muffins for an appetizer or crouton.

Directions

Preheat oven to 375℉ (190℃).

Grease and flour 12 cup muffin tin or mini muffin tins.

Whisk together dry ingredients, then stir in cheese.

In a separate bowl, whisk egg, milk, and butter.

Pour into dry ingredients and stir with a spoon just until moistened.

Spoon batter into tins and bake 20 to 25 minutes or until toothpick inserted comes out clean.

Made these muffins yesterday, and did some healthy alternatives. They were so cheesy an yummy. They did not last long, so make sure to double or even triple the bunch if you have more than 2 family members.
