Yangtze Chicken

Low Fat, Low in Saturated Fat, Trans-fat Free


2 pounds chicken breast halves, boneless, skinless
cut into 2 inch cubes
1 each pineapple
cut into 2 inch chunks
½ cup soy sauce, tamari
¾ cup ketchup
1 cup white wine
1 cup orange marmalade
4 tablespoons honey
16 each skewers

Mix marinade ingredients in large bowl.

Add chicken and mix well to coat.

Marinate for at least 1 hour in refrigerator.

Alternate chicken and pineapple pieces on skewers.

Grill 1 to 2 minutes on each side or to desired doneness.
