Sweet potatoes meet savory indulgence in this bold casserole that surprises everyone who tries it.

The natural sweetness of the potatoes plays beautifully against sharp melted cheese and the gentle bite of onions that soften into silky layers as they bake.

A whisper of chili powder adds warmth without overwhelming, while the potato slices turn tender and almost creamy in the oven.

This dish works equally well as a hearty meatless main or a standout side for roasted chicken or grilled steak.

Pro Tips

  • Slice sweet potatoes uniformly (about ¼-inch thick) for even cooking
  • Use vegetable stock instead of water for deeper flavor
  • Sharp cheddar or Gruyère cheese provides the best flavor contrast to the sweet potatoes
  • Remove the lid for the last 15 minutes to develop a golden, bubbly cheese crust
