I have made scalloped potatoes this way for years, only not in the crock pot, and I don't use any flour. I use also a soup can of milk, of course like Pet or Carnation is the best but I usually use a low fat 'regular' milk. I've never put cheese on them, but I might try that next time.

An easy way to make a deliciously creamy and cheesy scalloped potatoes. Using crock pot certainly made the recipe a lot easier and still very tasty. We used homemade cream of mushroom soup (see link below), which made the dish taste even better. Unlike tasteless canned mushroom soup, homemade one has lots of tangy mushroom flavor. If you don't feel like cooking, throw everything into your crock-pot, and you can enjoy this yummy one-pot meal right away when you are back home from work.

What an easy way to make this dish and it tastes delicious. Even my finiky daughter thought it was great even with "those onions". I had sweet purple ones. I thinly sliced my potatoes and onions with a food processor, so it only took about 90 minutes on high to be almost done. Then, I added chopped chives and cheddar and american cheese to the top and put it on low for another hour. Only problem was a very brown crockpot bottom, even though I greased it with Crisco vegetable shortening.
