Make your own delicious homemade soup that's so easy to make. This recipe uses a slow-cooker so it's a simple place all ingredients into the slow cooker and let is simmer all day unattended.

Ingredients

2 pounds potatoes
pared, cut in bite size pieces, about 6 potatoes
2 each leeks
washed, pared, cut in bite size pieces

2 each onions
chopped
1 each carrots
pared, sliced
1 each celery stalks
sliced
4 each chicken bouillon cubes

1 tablespoon parsley flakes
4 cups water
1 ½ teaspoon salt
1 x black pepper

2 tablespoons butter
13 ounces evaporated milk
1 x chives
chopped

Directions

Put all ingredients except milk and chives into a slow cooker or Crockpot®.

Cook on low 10 to 12 hours or high 3 to 4 hours.

Stir in milk in last hour.

Serve topped with chives.

I just got back from visiting my brother and his two kids. They stopped me at the door and warned me their son "hates" potatoes. He hunts them and refuses to eat anything that might have potatoes in them. All eyes were on the 8 year old as he cautiously tasted the soup. His face lit up and he simply pounded back a huge serving without a second thought. His 5 year sister complained right away, "how come you gave me so much I hate soup!". She ended up cleaning her bowl! Then my sister-in-laws mother 80+ years old from down stairs came up (they had offered her some of the soup) and went on and on asking what was in that soup and "oh my" it was so filling and how at her age most things bother her stomach but this soup. The verdict on this soup is in, pick eaters of all ages clean their bowl.

I used my own homemade vegetable stock and instead of a slow cooker used a pot on the stovetop and wow, this turned out super yummy. Warm, filling, layers of flavors people who don't like soup like this classic combination of leek and potato. A big bonus is that it freezes very well, I put it into zipper bags and lay them flat in the freezer per single portions. Well worth the effort and low salt. I find canned soup is just way too salty to be edible unless you water it down, yuck!

i enjoy making the potato soup it was so simple and tasty to boot. my house smell so good when i walk in the door. serve with salad and toasty cheese bread.what a quick and easy supper.
