Ingredients

3 tablespoons butter
or vegetable oil
1 onions
28 ounces tomatoes, canned
1 teaspoon garlic
32 ounces stock
vegetable
2 teaspoons cilantro

4 hot chili peppers

12 tortilla chips
fried

½ cup monterey jack cheese
shredded
1 cup avocados
*
4 tablespoons sour cream

Directions

There are the ingredients you need to make this yummy and warm soup.

Chop up the onions.
Mince the garlic.

Heat butter in 3 quart saucepan over medium high heat.

Sauté onion and garlic until onion are browned, about 5 minutes.

Heat butter or oil in 3 quart saucepan over medium-high heat.
Saute until onions are browned and very fragrant, about 5 minutes.

Add tomatoes, stirring, and cook for another 2 minutes.

Add tomatoes with juice.

Add broth and cilantro, simmer for about 15 minutes.

Add broth,
and cilantro.

Simmer for about 15 minutes.

Divide soup among serving bowls.

Place chilli peppers, tortillas, cheese and avocado on top.

Top with sour cream and serve warm.

Super tasty and warm up your whole body.

very, very easy to make. takes little to no time to prepare and provides lots of flavour. a definite favourite.

So good! I make an arroz recipe and place some of the rice at the base of the bowl and then top with this soup. For garnish: queso fresco, lime, avacado slices & tortillas. Amazing flavor!
