After we made that delicious Schulz's Guacamole Salad, we still had avocado left, and today it was quite cold. So we made this warm tortilla soup and it was amazingly delicious. Lots of yummy flavors and layers of textures from avocado, tortilla chips and cheeses. Cilantro, tomato and broth (we used vegetable broth) simmering together for about 15 minutes developed tons of deliciousness. It was cheesy, flavorful, warm, and refreshing. Strongly recommend this soup to everyone.

So good! I make an arroz recipe and place some of the rice at the base of the bowl and then top with this soup. For garnish: queso fresco, lime, avacado slices & tortillas. Amazing flavor!
