Sopa Azteca (Tortilla Soup)
It's a warm and flavorful soup. Avocado, cheeses, tortilla chips, cilantro, and tomatoes simmering together develops tons of yumminess. A cozy soup that warms you up and satisfies your taste buds.

Directions


Heat butter in 3 quart saucepan over medium high heat.
Sauté onion and garlic until onion are browned, about 5 minutes.


Add tomatoes, stirring, and cook for another 2 minutes.
Add broth and cilantro, simmer for about 15 minutes.


Divide soup among serving bowls.
Place chilli peppers, tortillas, cheese and avocado on top.
Top with sour cream and serve warm.

very, very easy to make. takes little to no time to prepare and provides lots of flavour. a definite favourite.

So good! I make an arroz recipe and place some of the rice at the base of the bowl and then top with this soup. For garnish: queso fresco, lime, avacado slices & tortillas. Amazing flavor!
