This no-fuss apple cake packs two full cups of finely chopped apples into a simple one-egg batter spiced with cinnamon and nutmeg. The apples release moisture as they bake, keeping the cake incredibly moist even with just a few tablespoons of butter in the entire recipe.

The batter is thick and dense before baking. That’s normal. All those apple pieces and nuts make it more like a studded dough than a pourable batter, but it bakes into a tender, fruit-heavy cake with crisp edges and a soft center.

Serve it warm straight from the pan with a scoop of vanilla ice cream or a dollop of whipped cream. This is the kind of cake that’s best eaten the day it’s baked while the edges are still slightly crunchy.

Directions
