When dinner needs to happen fast and you’ve got almost nothing in the fridge, this recipe saves the day. Five ingredients. Thirty minutes. Zero excuses.

Chicken breasts get sprinkled with grated Parmesan and Italian seasoning, baked until cooked through, then hit with a blanket of melted mozzarella right at the end. Serve it with salsa on the side for a fresh, spicy kick.

It’s the kind of recipe you memorize after making it once because it’s just that easy.

Chef Tips

  • Use bone-in, skin-removed chicken breasts for juicier results. Boneless breasts work too but watch the timing closely to avoid drying them out.
  • The mozzarella only needs one minute in the oven. Just long enough to melt, not long enough to brown and toughen.
  • Swap the jarred salsa for fresh pico de gallo if you want a brighter, crunchier contrast.

Directions

Preheat oven to 375℉ (190℃).

Place chicken, bone-side down, in a 9×13-inch baking pan.

Combine Parmesan cheese and Italian seasoning and sprinkle over chicken.

Bake for 15 minutes if using two breasts, 45 minutes for a broiler chicken.

Sprinkle with mozzarella cheese and bake 1 more minute.

Serve with salsa.
