Spetsioteko Psari (Baked Red Snapper Fish Greek Style)
A delicious way to prepare red snapper (or any white fish) with savory moist and fresh Mediterranean flavors.

Directions
Recipe can be halved for a hearty 2 servings.
Set the oven to 350℉ (180℃) F (180C) to preheat.
Add ¼ cup of the olive oil evenly into baking dish suitable to hold the fillets. For 2 pounds of red snapper filets about 14x9x2 inches.
Sprinkle ½ cup bread crumbs evenly over the olive oil.
Place the red snapper filets in single layer in baking dish; sprinkle with ½ teaspoon salt.
Pour the lemon juice over the fish fillets.
Mix ¼ cup of extra virgin olive oil, tomato sauce, chopped fresh parsley, white wine, minced garlic, ½ teaspoon salt and the pepper; spoon over fillets.
Sprinkle with ½ cup bread crumbs. Drizzle with a bit of extra-virgin olive oil.
Bake uncovered until golden brown, about 40 minutes.
Remove fillets to warm platter.
NOTE: 2 pounds fresh or frozen (thawed) cod, haddock, halibut or yellow pike fillets can be substituted for the red snapper fillets.
