Dinner for two doesn’t have to be complicated. This one comes together in 25 minutes using a box of bow tie pasta with sauce as the base.

Cook it up with water, milk, and a pat of butter, then fold in flaked smoked salmon, thawed green peas, sliced scallions, and a snip of fresh chives.

The salmon warms through in the residual heat of the pasta, staying silky and tender instead of tough. Pass the Parmesan at the table for anyone who wants an extra salty, nutty hit on top.

Kitchen Tips

  • Flake the salmon into bite-sized pieces rather than chopping. Gentle handling keeps the texture intact and gives each forkful a nice chunk of fish.
  • Defrost the peas fully before stirring them in. Frozen peas will drop the temperature of the whole dish and make the sauce seize up.
  • Add the salmon and vegetables after the pasta is fully cooked. They only need to warm through, not cook down.

Directions

Make pasta as directed on packages using water, milk and margarine.
