Ingredients

15 ½ ounces canned salmon
cups yogurt, low-fat
cups scallions, spring or green onions
chopped
cups celery
chopped
1 tablespoon lemon juice
1 x black pepper
to taste

12 slices bread
preferably whole wheat

Directions

Drain and flake salmon.

Stir in remaining ingredients except pepper and bread.

Season with pepper to taste.

Spread salmon mixture on half of bread slices; top with remaining bread.

Cut sandwiches into halves or quarters.

Makes 6 sandwiches.

Celery, scallions and salmon are such a delicious combination, they enhance each other's flavor to make the dish very tasty.

Made this salmon salad sandwich for Sean's lunch the other day, and he enjoyed it so much. The yogurt added some tangy creaminess and juiciness, perfect filling for a sandwich.
