This banana bread goes beyond the standard recipe with a few inspired additions. Honey adds a floral sweetness alongside the sugar, orange zest brings a bright citrus note that lifts the heavy banana flavor, and chopped dates scattered throughout create pockets of caramel-like chewiness.

Walnuts give each slice a toasty crunch, and three overripe bananas make the crumb dense and moist in that way only well-spotted bananas can deliver. The riper the banana, the more sugar it contains and the more intense the banana flavor.

Cream the butter, sugar, honey, and vanilla thoroughly before adding the eggs. That initial creaming traps air bubbles that help the loaf rise evenly. Rushing it gives you a dense, heavy bread with a gummy center.

Pro Tips

  • Use bananas that are heavily spotted or even black-skinned. They mash smoothly and taste sweeter than yellow bananas.

Directions

Preheat the oven to 350℉ (180℃).

Sift together into a bowl the flour, baking powder and salt.

In another bowl, cream the sugar, butter, vanilla and honey and add the orange zest.

Beat in the eggs and bananas.

Gradually add the sifted ingredients to the banana mixture.

Fold in the nuts and dates.

Pour the batter into a greased 9 x 5 inch bread pan and bake for 1 hour, or until a knife inserted in the center comes out clean.

Cool and eat.
