Ingredients

1 ½ cups oats, quick cooking
1 ½ cup whole-wheat flour
2 bananas
ripe, mashed
1 cup yogurt, plain
½ cup almond milk

½ cup honey
2 teaspoon baking powder
1 teaspoon baking soda
1 large eggs
½ teaspoon nutmeg
1 teaspoon cinnamon
½ teaspoon sea salt
1 teaspoon vanilla extract
½ cup chocolate chips

½ cup walnuts
chopped

Directions

Preheat oven to 400℉ (200℃).

Combine oats, flour, baking soda, baking powder, nutmeg, cinnamon, and salt in a large bowl.

In a separate bowl, combine bananas, yogurt, milk, vanilla, egg and honey. Mix well.

Add dry ingredients into the wet and mix just until well incorporated.

If desired, add in the chocolate chips and / or walnuts.

Fill lightly greased muffin tins and bake for about 15 to 18 minutes.

These are very good. The recipe made 12 large muffins that are healthy and moist. Great with morning coffee!

Wow, these muffins were absolutely the best! Bananas and yogurt made them super moist and tangy. Chocolate chips and walnuts added extra deliciousness. We made them before we went sailing, took a few with us and shared with friends in the boat. They all just raved about how moist and delicious these muffins were. They were packed with goodness and perfect for breakfast or a snack.
