Ingredients

3 large tomatoes
ripe
2 tablespoons ghee (clarified butter)
1 large onions
coarsely chopped
1 small potatoes
cubed
¾ cup tomato paste
7 ½ cups vegetable stock
1 pinch thyme

2 small dried red chiles
chopped

6 each cloves
whole

12 each peppercorns
*
3 each bay leaves
*
1 x salt
*

Directions

Skin the tomatoes and cut into chunks.

Melt ghee in pot over medium-low heat and cook onion until it turns golden.

Add the rest of the ingredients, adding enough salt to taste.

Simmer for 45 minutes.
