These drop cookies are packed with 1 ½ cups of fresh chopped apple, plus apple juice in the batter, so the apple flavor comes through in every bite. Cinnamon and cloves give them that warm, autumn-spice backbone, while brown sugar adds a caramel-like depth that plain white sugar can’t touch.

The dough is thick and chunky with fruit, nuts, and raisins. Don’t expect smooth, scoopable batter here. Stir those mix-ins in by hand so you don’t crush the apple pieces with the electric mixer.

These bake fast at a high heat, only 7 to 8 minutes. Pull them when the edges are just golden but the centers still look slightly underdone. They’ll firm up on the cooling rack. Overbaking turns them dry and crumbly instead of soft and cake-like.

The glaze goes on while the cookies are still warm so it melts into a thin, glossy coating. Powdered sugar, milk, a touch of butter, and vanilla. Simple, but it ties everything together and adds just enough sweetness to balance the fruit.

Pro Tips

  • Use a tart, firm apple like Granny Smith. Softer varieties like McIntosh will turn to mush in the batter.
  • Drop dough by slightly rounded tablespoons for even sizing. These spread very little, so what you drop is roughly what you get.
  • Glaze while warm, not hot. If the cookies are too hot, the glaze runs right off and pools on the rack.
  • Store in a single layer until the glaze sets, then you can stack them with parchment between layers.

Variations

  • Swap raisins for dried cranberries for a tart, seasonal twist.
  • Use pecans or walnuts for the chopped nuts, or try pepitas for something unexpected.
  • Add ½ cup butterscotch chips to the mix-ins for pockets of melted caramel.
