Directions
Combine tomatoes, red pepper, scallions, coriander and 2 teaspoon lime juice, lime zest, cumin, chili powder salt and red pepper flakes.
Stir in black beans and set aside.
Warm tortillas one at a time in a hot skillet.
Top with shredded lettuce, spoon on tomato mixture and sprinkle with peanuts.
