Crustless Bacon and Egg Quiche

An easy, tasty bacon and egg quiche is a perfect breakfast to start you day, or an ideal dinner on a busy week day.















6 slices turkey bacon
cooked, drained, and crumbled
½ cup milk, skim
½ cup biscuit baking mix (bisquick)
3 large eggs
¼ cup vegetable oil
teaspoon black pepper
1 cup cheddar cheese
fat-free, grated


Preheat oven to 350℉ (180℃). Prepare a 9 inch pie pan with cooking spray and flour; set aside.

In a food processor, combine milk, baking mix, eggs, oil, and black pepper. Process for 15 seconds. Pour into prepared pan.

Sprinkle bacon and cheese on top; gently press below surface with a fork. Bake for 30 minutes or until top becomes golden and brown.

Bake for 30 minutes.

Let stand 10 minutes before serving.

Cut into wedges and serve warm.

This quiche was just like the name, super easy to make. I made my own baking mix , and whisked the liquid and flour together instead of processing it in the food processor, which avoided washing more tools later :D But whisking worked perfectly well. Used whole fat cheddar cheese that added lots of yummy cheesiness.

The quiche came out fluffy and very tasty! Definitely a keeper recipe!
