Ingredients

1 each celery stalks
chopped fine
1 cup onions
chopped fine
2 cups milk
1 teaspoon salt
¼ teaspoon black pepper

1 pound crab meat
white or lump
½ stick butter
½ small sweet red bell peppers
chopped fine
*
¼ cup all-purpose flour
2 each egg yolks
beaten
*
½ teaspoon red pepper flakes
*
¼ cup cheddar cheese
grated

Directions

Sauté vegetables in butter until well done, but not brown.

Blend flour well into mixture.

Pour in milk gradually and stirring constantly.

Add egg yolk, salt, red and black peppers and cook for 5 minutes.

Add crab meat to sauce, blend well and transfer into a lightly greased casserole dish.

Sprinkle top with cheese and bake in 375℉ (190℃) oven for 15 or 20 minutes or until light brown.
