A refreshingly delicious chopped Mediterranean salad is also very quick and easy to put together. A great spring or summer salad with your BBQ.

Ingredients

1 each romaine lettuce
cut into 1/2-inch pieces

1 ½ cups chickpeas (garbanzo beans)
1 can, drained and well rinsed
½ cup kalamata olives
pitted and coarsely chopped

¼ cup sundried tomatoes
oil-packed and slightly drained
¼ each red onion
peeled and finely chopped
1 cup feta cheese
cut into cubes or crumbled
Dressing:
3 tablespoons olive oil, extra-virgin
2 tablespoons red wine vinegar
or to taste
1 clove garlic
small clove, crushed, optional
1 x black pepper
to taste

Directions

In a large mixing bowl, add the lettuce, chickpeas, olives, sun-dried tomatoes, red onions and feta cheese.

In a small bowl, whisk together all the dressing ingredients, season to taste with the black pepper.

Pour the dressing over the salad, gently toss until evenly coated and well combined.

Serve with a few slices of bread to make a vegetarian meal or a side dish with the BBQ dishes.

This was our dinner yesterday, I had it with two slices of toasted homemade 12-grain bread. Healthy yet tasty!

Very easy to make, nothing was complicated. The salad was very flavorful and refreshing, and it was filling enough for me to eat it as a main dish. Definitely a keeper!
