Chopped Mediterranean Salad
A refreshingly delicious chopped Mediterranean salad is also very quick and easy to put together. A great spring or summer salad with your BBQ.
cut into 1/2-inch pieces
chickpeas (garbanzo beans)
1 can, drained and well rinsed
pitted and coarsely chopped
oil-packed and slightly drained
peeled and finely chopped
cut into cubes or crumbled
olive oil, extra-virgin
red wine vinegar
or to taste
small clove, crushed, optional
In a large mixing bowl, add the lettuce, chickpeas, olives, sun-dried tomatoes, red onions and feta cheese.
In a small bowl, whisk together all the dressing ingredients, season to taste with the black pepper.
Pour the dressing over the salad, gently toss until evenly coated and well combined.
Serve with a few slices of bread to make a vegetarian meal or a side dish with the BBQ dishes.
