Like cookies and also like cheesecake, the combination of both cookies and cheesecake, wow, sounds a good idea for a sweet treat to satisfy the sweet tooth!

Ingredients

Crust:
cup butter
cup brown sugar

1 cup whole-wheat flour
½ cup walnuts
chopped, or sesame seeds or sunflower seeds
Filling:
¼ cup honey
8 ounces cream cheese
softened
1 large eggs
2 tablespoons milk
1 tablespoon lemon juice
lemon zest
grated

½ teaspoon vanilla extract
½ teaspoon nutmeg
optional
Topping:
½ cup -
reserved crumbs

fruit
or berries, or nuts

Directions

Cut into 2-inch squares, grab one and time to enjoy it :) With a pastry cutter, blend whole wheat flour, brown sugar, and butter to make a crumbly mixture. Stir in chopped nuts or seeds. Reserve ½ cup of the mixture for topping.

Add the chopped walnuts.

Press remaining crumbs into an 8 inch square baking dish that has been lightly oiled. Bake at 350℉ (180℃). for 12 to 15 minutes.

Transfer the mixture into a 8-inch square baking dish that has been oiled.
Press the crumbs firmly and evenly.

Beat filling ingredients until smooth and pour over the prepared crust.

While the crust is baking in the oven, let's work on the filling.
Beat with an electric mixer until smooth and creamy.

Sprinkle with the reserved crumb mixture. Add fruit or nuts over top and bake at 350℉ (180℃). for 25 minutes.

All the reserved the crumb mixture is evenly sprinkled over the creamy filling.
Done.

Cool and then refrigerate. Cut into 2 inch squares. Store in the refrigerator.

Out of the oven, still hot.

These cheesecake cookie squares or bars were absolutely delicious. The crust was more like cookies, crispy and crunchy; the filling was creamy and smooth, lemon juice and zests gave the refreshing touch; I chose to use fresh blueberries as the topping, it was a great match with all the other flavors. You can top with any kind of berries, mixed berries or other fruits. Strongly recommend this recipe to everyone who has a sweet tooth :) You will love it!
