A buttery, moist and delicious blueberry banana bread is perfect for snack with a cup of afternoon tea.

Ingredients

2 cups sugar
2 sticks butter
5 medium bananas
mashed
4 large eggs
4 cups all-purpose flour
3 tablespoons baking powder

1 teaspoon baking soda
½ teaspoon salt
2 teaspoons vanilla extract
2 cups blueberries

Directions

Preheat oven to 325℉ (160℃).

Grease and flour 2 loaf pans.

Cream together butter and sugar.

Beat in eggs; add bananas, then 2 cups flour.

Measure 2 cups flour, reserving 2 tablespoon to coat blueberry.

Place flour in sifter with remaining dry ingredients.

Sift and fold into the banana mixture.

Sprinkle 2 tablespoons flour over the blueberries and coat well; then fold into batter.

Divide the batter into prepared loaf pans.

Bake for approximately 50 minutes.

Very moist and buttery. The only thing I did differently was that I used half whole wheat flour and half white flour, and the bread still came out delicious. Definitely one of those good banana bread recipes.
