This moist yet delicious coffe cake is made with whole wheat flour, oat bran, applesauce, peanut butter, chocolate chips and several kinds of dried fruits. It’s great for breakfast or a healthy yet tasty snack with a cup of coffee or tea.

Directions

Preheat the oven to 350℉ (180℃).

Add the butter, canola oil, peanut butter, egg and applesauce in a medium bowl, and mix until well blended.

Mix together the flour, baking soda, salt, cinnamon and nutmeg in a large bowl until well combined.

Pour the liquid mixture into the flour mixture, and mix with a woonden spatula until well just incorporated.

Pour the batter into a well greased 8-inch square pan or a similar capacity baking pan.

Bake for about 40 minutes or until a wooden pick inserted in the center comes out clean.

Cool, in the pan, for 10 minutes and cut into squares. Serve warm or at room temperature.

Note:

The cake can be kept in an air-tight container in the frige for up to 1 week or frozen up to 1 month.

You can add whatever dried fruits you like. If you don’t have oat bran, you can use wheat bran or ground flax seed meal or ground oats instead.
