Directions
Preheat the oven to 350℉ (180℃) to get things cooking. Then, grab a 9 x 5-inch (23x13cm) loaf pan and either coat it with nonstick cooking spray or a light buttering, just to make sure nothing sticks.
Next up, let's mix our dry ingredients. In a medium bowl, whisk to combine tne the flour, rolled oats, baking powder and soda, the cinnamon, and salt in a bowl and set aside.
Now, let's move on to the wet ingredients. Using an electric mixer on mid-level speed setting, beat the egg, egg white, brown sugar, honey, and oil until smooth and creamy.
Add buttermilk to the mix and beat again. Make sure everything is well combined.
This is where we bring everything together. Gently stir the flour mixture and apples into the batter by hand until everything is mixed well.
Pour the batter into the greased pan and bake for 50 to 60 minutes, or until a skewer or toothpick inserted in the center of the loaf comes out clean. The crust may crack, but that's okay.
Let's give our delicious creation a little rest. Cool the baked loaf in the pan on a wire rack for about 10 minutes.
Finally, turn the loaf out onto the rack and let it cool completely before slicing into it. Enjoy!
