Tart apples and juicy pears tossed with lemon juice get sandwiched between buttery whole wheat bread cubes tossed with sugar.
Brown sugar mixed with lemon zest, cinnamon, and nutmeg goes between the layers, and everything bakes covered first, then uncovered until the top turns crispy and golden.
Pro Tips
- Toss the fruit with lemon juice immediately after slicing to prevent browning and add brightness
- Cube the bread instead of tearing it for more even pieces that crisp up uniformly
- Bake covered for the first 30 minutes so the fruit steams and softens, then uncover for the final 30 to crisp the topping

Peel and slice apples and pears into thin slices. Cube the whole wheat bread slices. Preheat oven to 375℉ (190℃).
Toss apples and pears with lemon juice in bowl. Toss bread cubes/crumbs with butter and sugar in another bowl. Combine brown sugar, lemon peel, cinnamon and nutmeg in bowl. Spread half of fruit in 9” square baking dish . Sprinkle with half the bread cubes and then half the sugar mixture.
Repeat layering. Cover and bake 30 minutes. Uncover and bake 30 minutes more. Serve with custard sauce.
