The recipe is dead simple, just eggs, milk, flour, baking powder, and salt; what defines it is the technique of pouring the batter through a funnel in spiral curls directly into hot oil.
The oil temperature is the make-or-break detail. 360°F (180°C) is the sweet spot: hot enough to set the batter crispy in seconds without it absorbing oil, but not so hot that the surface browns before the inside cooks through. A candy thermometer is the easiest way to nail it; a kitchen test cube of bread should turn golden in 60 seconds at the right temperature.
Batter consistency matters as much as oil temperature. It should flow easily through the funnel in a thin stream, like heavy cream. Too thick and it clogs; too thin and it disperses into shapeless drops instead of holding the spiral pattern. Adjust by adding a tablespoon of flour or milk as needed.
Pro Tips
- Cover the funnel spout with a finger while filling, then release the finger to start the pour in one continuous stream over the oil.
- Use a funnel with a half-inch diameter spout; wider and the strands are too thick to cook crispy, narrower and they tangle.
- Drain on a paper bag covered with paper towel (as the original recipe says) for maximum oil absorption.
- Dust with powdered sugar only after the cake has stopped steaming or the sugar will dissolve.
Variations
- Drizzle with chocolate sauce or caramel sauce along with the powdered sugar.
- Top with fresh sliced strawberries and whipped cream for a strawberry shortcake cake variation.

In a bowl, combine eggs and milk.
Sift together flour, baking powder and salt.
Add to egg misture and beat with electric mixer until smooth. (Check to see if mixture flows easily).
In a large skillet heatoil to 360 degree F.
Covering the end of a small funnel with your finger, pour batter into hot oil in a spiral shape.
Fry until golden(about 3 minutes) using tongs to turn.
Cook 1 minute more. Drain on paper bag covered with a paper towel.
Sprinkle with cinnamon and powdered sugar or serve with maple syrup. Delicious.
