Easy chicken broccoli casserole with Rice-a-Roni, creamy chicken soup, and melted cheddar. A hint of curry powder gives this cozy weeknight bake a warm, unexpected twist.

This is the kind of casserole that gets passed around at potlucks with someone whispering, “What’s your secret?" The secret is curry powder. Just half a teaspoon transforms a standard chicken and broccoli bake into something you’ll actually crave.

Layers of chicken-flavored Rice-a-Roni, tender broccoli, and cubed chicken get blanketed in a creamy sauce made from cream of chicken soup and broth, then buried under a thick layer of melted cheddar.

It takes about 15 minutes to throw together with mostly pantry staples, making it a lifesaver on busy weeknights.

Pro Tips

  • Use rotisserie chicken to skip the cooking step entirely and get this in the oven even faster.
  • Don’t thaw the broccoli before layering. It’ll cook through perfectly during the 45-minute bake and stay bright green.
  • Add a sprinkle of breadcrumbs over the cheese for a golden, crunchy topping.
