These were delicious after a little bit of tweaking. I don't think I've ever made meatballs without some garlic, so I felt the need to add one large clove of minced along with a teaspoon of soy sauce, replacing the 1/2 teaspoon of salt, in the meat mixture...

Directions

Mix meat, crumbs, onion, egg, salt, ginger and milk.

Shape mixture into balls by rounded tablespoonful.

Melt shortening in large skillet; brown and cook meat balls.

Remove meat balls and keep warm.

Pour fat from skillet.

Mix cornstarch and sugar.

Stir in reserved pineapple juice or syrup, vinegar and soy sauce until smooth.

Pour into skillet and cook over medium heat, stirring constantly, until mixture thickens and boils.

Boil and stir 1 minute.

Add meat balls, pineapple tidbits and green pepper.

Heat thoroughly.

This is great. This is simple and delicious. I like pineapple with meat. I always stir fry pineapple with chicken or pork. It give good flavor and seem make the meat tender. :)
