Six ingredients and one pan. Bone-in chicken breasts marinate in a mix of lemon juice, lemon zest, honey, oil, and fresh rosemary, then bake until the meat is juicy and the skin turns golden.

The marinade does real work here. Lemon juice tenderizes the surface of the chicken while honey caramelizes during baking, creating a sticky, sweet-tart glaze. The rosemary infuses the meat with piney, herbal flavor the longer it sits. Even 30 minutes makes a difference, but a few hours is better.

Baking covered first steams the chicken and keeps it moist. Removing the cover for the last 20 minutes lets the skin crisp and the marinade reduce into a concentrated glaze on the surface.

Pro Tips

  • Use bone-in breasts. The bone insulates the meat and prevents the chicken from drying out during the 50-minute bake.
  • Marinate longer if you have time. Several hours in the fridge lets the lemon and rosemary penetrate deeper.
  • Don’t skip the lemon zest. The juice adds acid, but the zest carries the intense citrus aroma that makes this dish sing.
  • Spoon the pan juices over the chicken when serving. They concentrate into a bright, herby sauce.

Variations

  • Swap rosemary for fresh thyme or a mix of both for a Provençal herb profile.
  • Add whole garlic cloves to the baking dish for roasted garlic on the side.
  • Use the same marinade on chicken thighs for richer, more forgiving dark meat.
