Ingredients

4 slices whole wheat bread
or white
cup mozzarella cheese
shredded, or up to 1/2 cup

1 teaspoon olive oil
½ teaspoon balsamic vinegar
2 cloves garlic
minced, optional
¼ teaspoon basil
crumbled, or 1 to 2 tablespoons freshly chopped
*
¼ teaspoon oregano
crumbled
*
3 ½ ounces roasted red bell peppers
1 tablespoon Parmesan cheese
rated

Directions

Place bread on small baking sheet.

Combine cheese, oil, vinegar, garlic if desired, basil and oregano.

Spoon onto bread.

Top with red pepper; sprinkle with Parmesan.

Bake in preheated 500 degree F. oven 5 to 8 minutes until cheese is melted.

Had a few sweet red bell peppers to use up, found this recipe, so I roasted the pepper first, and I used 1/2 cup of the mozzarella cheese and 2 tablespoons fresh basil, also I added 4 cloves of minced garlic into the cheese mixture, and these a few toasts turned out incredibly delicious, and we will definitely make this simple and tasty recipe very often!

This is a really good recipe. I've just made some minor adjustments in some of the ingredients. Generally, this recipe is great.
