Ingredients

¾ cup vegetable shortening

½ cup sugar
granulated
1 cup brown sugar
packed

1 large eggs
¼ cup water
1 teaspoon vanilla extract
¼ cup cocoa powder
½ cup peanut butter
¼ cup molasses
1 cup all-purpose flour
½ teaspoon baking soda
1 teaspoon salt
3 cups oats, quick cooking
uncooked
1 x nuts
optional, chopped

Directions

Beat together with a wooden spoon, shortening, 2 sugars, egg, water, vanilla, cocoa, peanut butter and molasses until creamy.

Combine flour, baking soda and salt and add to mixture.

Add oatmeal and nuts, and blend well.

Chill dough for 15 minutes.

Drop by rounded teaspoonfuls onto greased cookie sheets.

Bake at 350` for 12 to 15 minutes.

Makes 4 to 5 dozen cookies.

These cookies were great, I substituted water to buttermilk, and I used 1/4 cup of the butter and 1/4 cup of the olive oil to cut down the saturated fat; and I used whole wheat flour and rolled oats, I added a cup of walnuts at the end. These cookies are definitely great treat in any time.

A terrific light chocolate cookie with a touch of peanut butter. I cut the shortening to 1/2c. with the expected drier results, but I still enjoyed them.

They were tasty little things! I liked the nuts and the hint of sweet (honey?) I think maaaybe they need just a little more sugar or honey for just a little more sweetness. But I certainly enjoyed them just the way they were!
