Ingredients

250 grams mushrooms, button
Chopped finely
4 each scallions, spring or green onions
Chopped, undefined

¼ cup pecans
Chopped
½ cup parsley leaves
Chopped
½ cup unbleached all-purpose flour
1 each egg yolks
*
½ teaspoon salt
½ teaspoon black pepper

Directions

Mix all the ingredients together, form patties, fry both sides until brown. Use as hamburger patties to create your own vegetarian burgers or serve with a garlic or cheese sauce.

These are really really good...I made them for supper last night, and my husband and I ate all four of them! The only change I made was to add a whole egg instead of a single yolk (though one egg yolk would've worked just fine); and I fried them in a tiny amount of butter. Perfect! We'll have these again--maybe topped with a garlic or cheese sauce (that sounds like a great idea!).
