Ingredients

2 pounds fish trimmings

2 quarts water
cold

¼ cup tarragon vinegar
2 each celery stalks
2 each carrots
2 each leeks

½ head lettuce
*
3 each parsley sprigs
*
2 each bay leaves
*
1 teaspoon thyme
dried
*

Directions

Combine all ingredients in 4- to 5-quart saucepan and bring to boil.

Reduce heat and simmer uncovered 45 minutes.

Strain through colander or cheesecloth-lined strainer before using.
