Impossible ham and broccoli pie: a retro crustless bake that makes its own biscuit crust from Bisquick, eggs, and milk layered over ham, broccoli, and cheese.

The “impossible pie” is a 1970s-era Bisquick miracle that still earns its spot in the weeknight rotation. The magic is that biscuit mix, eggs, and milk get poured over a layered casserole of ham, broccoli, cottage cheese, Parmesan, and grated cheese, and as it bakes, the batter sinks to the bottom and sets into a soft, quiche-like crust while the toppings stay on top.

No rolling, no blind-baking, no fussy pastry. It comes out of the oven looking like a proper pie, somewhere between a quiche and a strata, with salty ham, tender broccoli, and three cheeses pulling their weight.

It’s freezer-friendly leftover territory, great for brunch, and a genuinely smart way to use up the last of a holiday ham.

Kitchen Tips

  • Thaw frozen broccoli fully and pat it dry, wet broccoli waters down the egg custard and leaves you with a soggy bottom.
  • Use sharp cheddar, Gruyère, or Swiss for the grated cheese topping, mild cheeses get lost in the mix.
  • The knife test is key: pull it when the blade comes out clean from the center, another 5 minutes past that turns the edges rubbery.
  • Let the pie rest 10 minutes before slicing. The custard sets as it cools and you get clean squares instead of oozy ones.

Variations

  • Swap ham for cooked bacon, diced rotisserie chicken, or even crumbled breakfast sausage.
  • Replace broccoli with sauteed spinach, asparagus tips, or diced bell pepper.

Directions

Chop ham, add onion, salt, pepper.

Layer on bottom of 13×9 pan the cottage cheese and parmesan.

Next layer the broccoli, ham onion, salt and pepper.

Top with half the cheese.

Beat milk, baking mix, and eggs.

Pour over the top. Bake at 350℉ (180℃). for 35 to 40 minutes until knife inserted in center comes out clean.
