15 minHot turkey salad is one of those mid-century recipes that sounds odd but delivers. Leftover turkey gets mixed with celery, sliced almonds, mayonnaise, lemon juice, and grated onion, then topped with sharp cheddar and crushed potato chips and heated until bubbly. It’s a warm, creamy, crunchy casserole disguised as a salad.
The mayo-lemon base does the same job as a cream sauce but without any cooking. It binds everything together and keeps the turkey moist during heating. The lemon juice brightens the richness and keeps it from tasting flat. Sharp cheddar on top melts into a savory blanket, and the crushed potato chips give you a salty, crunchy topping that’s oddly addictive.
This cooks in the microwave in about 6 minutes, which makes it one of the fastest ways to turn leftover turkey into a real meal. No oven preheating, no waiting around.
The celery is essential. It adds the crunch and freshness that keeps this from becoming a heavy, one-note dish.
Kitchen Tips
- Use sharp or extra-sharp cheddar. Mild cheddar melts fine but doesn’t have enough flavor to cut through the richness of the mayo.
- Chop the celery into small, even pieces. Large chunks throw off the texture balance.
- Don’t stir the cheese and chips into the mixture. They go on top so you get distinct layers of creamy filling, melted cheese, and crispy topping.
- This works equally well with leftover chicken, tuna, or cooked shrimp.
Variations
- Oven method: Bake at 350°F (180°C) for 20 minutes if you want a crispier potato chip topping than the microwave delivers.
- Water chestnut crunch: Add diced water chestnuts for an extra layer of snap and crunch.
