Love this mediterranean style pasta salad! Marinated artichoke hearts, olives, and feta cheese were a delicious combination. The cherry tomatoes and broccoli add the fresh taste, sometimes we add several strips of roasted bell pepper, or freshly sliced mushrooms, or a few coarsely chopped sun-dried tomatoes.

POUND G BOW-TIE PASTA (FARFALLE)
or any other pasta, prefer whole wheat

CUPS L BROCCOLI FLORETS
fresh or frozen

PINT ML CHERRY TOMATOES
halved *

OUNCES ML/G ARTICHOKE HEARTS
1 can, marinated, drained, rinsed and quartered

OUNCES ML/G FETA CHEESE
crumbled

CUP ML KALAMATA OLIVES
pitted and chopped or 1 can (6-ounce) small black olives, drained *

or italian, low-fat, more as needed *

as needed, optional *

Directions

Cook the pasta according to package directions.

About 3 minutes before the pasta is done, stir in the broccoli.

Bring back to a boil and cook until the pasta is done.

Drain and transfer in a large bowl.

While the pasta is still warm, toss in the tomatoes, artichoke hearts, cheese, olives, salad dressing, and herbs as needed until well combined and evenly coated.

It can be served warm or chilled with grated parmesan if needed.
