This grilled chicken uses gin as a marinade ingredient, and it’s not a gimmick. The juniper and botanical flavors in the gin add a piney, herbal complexity to the lemon and oregano that straight lemon juice alone can’t deliver. Twenty minutes is all the marinating time you need.

The marinade gets whisked into an emulsion: lemon juice, gin, oregano, salt, sugar, and pepper first, then oil streamed in while whisking. Emulsifying the marinade means the oil and acid coat the chicken evenly instead of separating into pools.

Grilling over hot coals for about 7 minutes per side gives the chicken charred edges and a juicy center. The sugar in the marinade caramelizes on the grill, adding color and a faint sweetness that balances the bright lemon and bitter gin.

Pro Tips

  • Use a decent gin with clear juniper flavor. Cheap, neutral gin won’t contribute much. You’re cooking with it, but the botanicals matter.
  • Twenty minutes of marinating is enough. Longer than that and the acid from the lemon starts to break down the chicken surface, making it mushy.
  • Oil the grill rack before placing the chicken. The sugar in the marinade makes sticking worse than usual.
  • Let the chicken rest for 3 to 5 minutes after grilling before serving. The juices redistribute and the meat stays moist.

  • Use vodka instead of gin for a more neutral spirit that lets the lemon and oregano dominate.
  • Add fresh rosemary or thyme alongside the oregano for a more complex herb blend.

Directions

In a shallow dish whisk together the lemon juice, the gin, the oregano, the salt, the sugar and pepper to taste, add the oil in a stream, whisking, and whisk the marinade until it is emulsified.

Add the chicken, coating it well with the marinade, and let it marinate, covered and chilled, for 20 minutes.

Grill the chicken, reserving the marinade, on an oiled rack set about 6 inches over glowing coals for 7 minutes on each side, or until it is cooked through.
