70 minCheeseburger pie is the kind of weeknight dinner that earns its keep when you have a stash of seasoned freezer mix on hand, that pre-browned, batch-cooked ground beef base smart cooks keep ready to go. Pull it from the freezer and supper is mostly assembly.
The crust skips homemade pastry entirely: just biscuit baking mix and a splash of milk kneaded into a soft dough, then rolled and fluted into the pan.
Brown the meat mix with salt, pepper and Worcestershire for that burger-joint savor, then pile it into the shell.
Sliced tomatoes go on next, and a quick beat of eggs and shredded cheddar spooned over the top sets into a golden, cheesy layer as it bakes.
Pro Tips
- Drain the browned meat well. Leftover fat makes the bottom crust soggy and the slices hard to lift clean.
- Spread the cheddar-egg topping all the way to the edges so it seals the filling and browns evenly.
- Let the pie rest a few minutes out of the oven before cutting. The egg layer firms up and the wedges hold their shape.
Variations
- No freezer mix on hand? Brown a pound of ground beef with a chopped onion and a little garlic to stand in.
- Swap the cheddar for pepper jack and scatter in a few pickled jalapenos for a spicier, bacon-cheeseburger spin.
